Having trained over five thousand sushi learners to date, our classes unpack the
art and techniques of preparing authentic Japanese sushi, beautifully. While we
focus on providing hands-on learning experiences, each class is presented using
a specific framework to convey a complete sense of how sushi is fashioned in
Japan. Our classes include detailed ingredient histories, beloved taste
combinations, prized ingredients, specialist techniques, and the best hygienic
practices in professional kitchens. We also explore what it means to prepare
sushi as a cultural act, the physical, mental, and spiritual benefits of sushi,
and how gratitude is expressed when receiving delicious food in Japan.
