EFFECTIVE – The classes are kept small in order to assure the best attention of our swimming teachers, enhance the development of the correct skills and to produce safe and competent swimmers. TEACHERS are recruited from a variety of backgrounds that include: current competitive swimmers, former competitive swimmers, school teachers and parents.

Anne-Claire has practised Tai Chi following the Art of Chi School (L’Art du Chi – Vlady Stevanovitch method) for many years with Laurent Haquin in Edinburgh and various teachers from the school in France. This method is rooted in the ancient Chinese arts of Tai Chi Chuan and Qi Gong. Through gentle exercises, it improves our posture, stability and mobility. The slow pace, gentle breathing techniques and sustained attention we give to our movements helps us experience and develop an inner sense of calm, balance and focus, which are of so much help in our daily life.

The kitchen is the root of it all, serving a daily menu of breakfasts and lunches that are equal parts healthy and indulgent. From daily stews and sandwiches, to cakes and mac 'n cheese, we love feeding people and creating fresh salads and smoothies that put a smile on your face and nourishment in your body. As part of the holistic experience, we built a space upstairs that is calm, nurturing, and safe; this space is the Beetroot Sauvage Wellness Centre, offering a variety of yoga classes and therapies. All classes focus on gentle movement that not only stretch and relax the body, but allow you to feel into it, explore and perform self-enquiry into your emotional and spiritual needs. A space to rest and focus inward, to thank the body, and to draw close attention to healing. Along with a weekly schedule of classes, we have a variety of therapists, whose knowledge of healing the body is rooted in their own journey, training and experience. They blend sensitivity and magic to create a safe space that allows you to honour your needs and embrace rejuvenation with full intention. In addition to our focus on the kitchen and the body, we have our little slice of heaven, our city sanctuary garden: a rustic space that you can dance in, eat in, laugh in, or bring plants and garden in. As often as possible we have musicians playing live music on Sundays and we thoroughly encourage dancing if you feel so inspired. We do!

From the Edinburgh Hat Studio, award-winning Scottish milliner and hat maker Sally-Ann Provan creates bespoke handmade hats, headpieces, & bridal millinery for weddings (the bride, her family & guests), Royal Ascot, Henley Royal Regatta, investitures, Royal garden parties, special occasions, stage & screen. For every event and and everyday! Sally showed for two seasons at London Fashion Week in her own catwalk show, and her work and inspirations are featured in four books. She is also featured in the main film in the 'Fashion and Style' gallery at the National Museums of Scotland, and created a headpiece which was shown in the Scottish National Portrait Gallery as part of the stunning 'Beauty By Design' exhibition. She is a V&A Dundee Design Champion. Her hats have graced the heads several members of the Royal Family including HRH The Duchess of Cambridge; HRH Princess Beatrice; HRH Princess Eugenie; Zara Tindall; and Autumn Phillips, and other clients include First Minister Nicola Sturgeon, mezzo soprano Katherine Jenkins, and broadcasters Edith Bowman; Charlotte Hawkins and Francesca Cumani. She also creates headwear for opera, ballet, and theatre companies, television, and film. Each piece is designed and made with great attention to detail and finish. She is Scottish Opera's milliner making hats for over 30 of their productions, and other clients include The BBC, Scottish Ballet, The Royal Lyceum Theatre, and Netflix including a hat worn by leading lady Brooke Shields in 'A Castle for Christmas'. After her BA Hons degree in jewellery, Sally dallied a while in paper conservation and museum sculpture, before nurturing her passion for hats and accessories with comprehensive millinery training in London. Amongst others, she has trained under the late Queen Mother's milliner and with The Royal Opera House in Covent Garden. She was one of 100 top British design business selected to exhibit at 'UK Now' in Australia, and also exhibited at the prestigious Philadelphia Museum of Art Craft Show.
