I’m Xuan (pronounced Sawn). I was born in Vietnam from Chinese Vietnamese parents and I am proud to be one of the original Vietnamese boat people now living here in the UK. In the late 1970s, the aftermath of the Vietnam war and the growing oppression of the ethnic Chinese living in Vietnam forced my family to flee their home. We left Vietnam on a small overcrowded and ramshackle boat that wasn’t fit for the open water and sailed the perilous South China Sea to Hong Kong. At age 2 my first and only memory of Hong Kong is a hazy image of the orange skies. After 6 months we left the tropical heat of Hong Kong and immigrated to the cold, or you could say dreich (Scots for dreary) climate of the Scottish winter. We lived in the quiet outskirts of Glasgow for four years before moving and settling in London, which was a hubbub of culture and activity. By the age of 14 I had lived in four vastly different countries and each of these places have influenced the person that I am and the food I love to cook and eat. My own cooking adventure started at an early age – washing the rice grains for steamed rice and undertaking the long and meticulous task of cleaning and snapping the tails off bean sprouts for my parents spring rolls. This you can say was my training for the future food lover in me – or feeder. As a child of refugees, love was often shown through food rather than words. From these duties and by always keeping my belly full, my parents quietly passed on their own rich food heritage and family history to me through the years. In my 20’s I became a sushi chef at a vibrant restaurant in Central London, and spent 4 years learning the meticulous art of preparing, filleting and slicing fish for sushi, maki, nigiris and sashimi. I have since run a number of supper clubs in London and Dundee, including a charity Chinese hotpot that raised over £2,000 for the charity – Sarcoma UK. This year, I’ve taken the next leap in my food adventure and launched my online cookalong classes, which have been great fun and allow me to reach new like minded food enthusiasts far and wide. Casual Rice is all about sharing my love for food and my own culinary heritage through authentic but informal Vietnamese and Chinese meals I devoured when growing up, with Japanese influences from my sushi training days. The name Casual Rice comes from The Mandarin Way, a book by the inspirational Cecilia Sun Yun Chiang. A pioneering woman who in the 1960’s opened one of the first authentic Chinese restaurant in North America. In her book she writes “when we sat down to meals as a family, we adopted a much simpler mode of eating … such meals were known as “pien- fan”, “casual rice” or what might be termed home cooking”. As the saying goes, food is a universal language that brings people together. I am hoping through this website and cookalong classes I am able to share personal recipes from my own home, that you can make and share in your homes with your loved ones. Thanks for visiting.

Exceed Worldwide, with partners, has established Schools of Prosthetics and Orthotics (P&O) in five countries in Southeast and South Asia – Cambodia, Sri Lanka, Indonesia, the Philippines and Myanmar. With the exception of the Philippines, our Schools train Prosthetist Orthotists to International Society for Prosthetics and Orthotics (ISPO) Category 2 standards. The Philippines School trains students to ISPO Category 1 standard. In addition, our Cambodian School trains P&O technicians. This course has been recommended for ISPO Category 3 accreditation and is awaiting certification. Exceed works closely with ISPO to gain and maintain international accreditation standards and all of our P&O schools work closely with key partners, including government ministries, institutions of third-level education disabled persons’ organisations and other NGOs, to ensure that programme curricula comply with national standards and that graduates of P&O schools are recognised as health care professionals who can be integrated in national health systems. Places at our first, internationally-acclaimed school in Cambodia (established in 1994) are offered to students from other lower and middle income countries and this school will offer a course at ISPO Category 1 level from 2021. DEVELOPING CLINICAL SERVICES Courses at each P&O school focus on theory and practice, with a strong emphasis on practical training in teaching clinics which emphasise the importance of establishing and delivering care to national and international standards. Exceed P&O centres provide high quality, free or very low cost physical rehabilitation services for people with disabilities. ADVOCACY We work at grass roots level with teachers, community leaders and families to encourage understanding of the needs and abilities of children and adults with disabilities and promote their inclusion in local communities and society in general. We also collaborate with national and international resource holders and policy makers, including national governments, ISPO and WHO, to ensure that equal rights and the inclusion of persons with disability is high on the agenda. COMMISSIONING ACTION-BASED RESEARCH Lack of hard data and high quality research on the impact of disability, the needs of people with disabilities and the design, development and assessment of support services is a critical issue. To address this well-documented research and data deficit, Exceed has founded and co-ordinates the Exceed Research Network (ERN), an international research consortium involving universities, NGOs, P&O businesses and eminent social, P&O and engineering researchers and practitioners from these sectors. ERN is a young organisation, but Network partners are already carrying out applied research to address a range of P&O and disability issues. OFFERING COMMUNITY-BASED REHABILITATION Exceed Community-Based Rehabilitation (CBR) activities reflect ISPO and WHO guidelines. Our community teams focus on the identification of people with disabilities who need support, referral for treatment at Exceed centres and follow-up support. This support enables children, young people and adults with disability to access education and training, gain employment or start small businesses. We also work with community projects that directly address poverty and the exclusion of people with disabilities from mainstream development assistance. DEVELOPING NEW APPROACHES TO SERVICE PROVISION 80% of those who need P&O services do not have access to them. Resources are scarce and Exceed believes that the future provision and expansion of P&O services to an adequate level will depend on creative co-operation between governments, the private sector, NGOs and donors to develop new service models. Exceed believes that social enterprise (a business that uses its profits for social impact) will play an important role in this mix and has launched Exceed Social Enterprises as a vehicle to access private wealth to support charitable services.

We are now registered as Knowledge Change Action Ltd, and as of October 2021 we have become an Employee Owned Trust. As an employee-owned organisation KCA aspires to be a beacon to those who want to lead sustainable organisations, rooted in their local communities, where employees are active decision makers shaping their future together. Our small, experienced team, managed from our Head Office in Gloucestershire, has an excellent track record in running effective training programmes, rooted in the science-based theory of attachment, trauma and resilience, that are responsive to the changing needs and priorities of our Commissioners. In 2007, at the age of 22, David Duncan gave up a secure job in the IT industry and took the first steps to make an old dream come true. David has always had a strong creative streak; from helping his grandmother bake and decorate the most beautiful cakes in her kitchen when he was a little boy, to sculpting in clay in his school’s art department – the seeds were sown that would eventually grow into the highly successful and award-winning 3D Cakes. From a humble start in 2005, making spectacular wedding cakes for friends and friends of friends in his kitchen, things accelerated quickly to an ever-expanding business. David is now one of Europe’s most renowned cake designers, most famous for his fashion-inspired cakes. David and his team have been honoured to design and create cakes for HM The Queen, HRH The Prince of Wales, J.K Rowling, Prince William, Bon Jovi, Crowded House, and high profile brands including Dior and Chanel. 3D Cakes Edinburgh won the VOWS (Voted Outstanding Wedding Supplier) ‘Cake Designer’ Award in 2008 & 2009. In 2010 a selection of 3D's wedding designs featured in the summer issue of VOGUE magazine in the UK. Later that year, David changed his focus to a previously unfounded niche in the UK market – creating realistic sculpture cakes. In 2011, the company's fashion inspired designs were showcased at Copenhagen Fashion Week. In 2012, David expanded into the field of cake master classes, with 3D Cakes having tutored in excess of 32,000 students to date at the David Duncan Sugarcraft School. A highlight of 2012 was creating a giant cake (a map of Scotland) for Holyrood Palace depicting HM The Queen’s Diamond Jubilee Tour Route. In April 2013, the team created a cake for the Royal Yacht Brittania’s 60th Anniversary celebrations, with the cake being displayed on board the Yacht, in the magnificent State Dining Room. In September of that year, David was honoured to design a cake for Prince William, whom gifted the cake to Yao Ming for his birthday and rhino conservation work. In December 2017, the 3D Cakes Edinburgh team were honoured to create a replica of HMS Queen Elizabeth Aircraft Carrier which David presented to HM The Queen at the commissioning ceremony for the ship in Portsmouth. 2018 saw the David Duncan Masterclass Tour begin in Copenhagen, with future tours planned for Paris and Milan. In early 2019, 3D Cakes Edinburgh were finalists in the Confetti Awards and again won both the "South East Wedding Cake Designer of the Year" and the overall "Scottish Wedding Cake Designer of the Year" at the Scottish Wedding Awards.

Our Team Our team is strengthen by support from a range of extensively qualified people with expert knowledge in delivering construction health & safety modules. Graham McEwing Graham McEwing has gained extensive knowledge throughout his working life within a number of areas from 2005 to the present day. During this time he works with a range of training providers and helps learners achieve their apprenticeships and functional skills within a wide range of course subjects. Currently his key focus would be within the Construction sector and currently provide Level 1 – Health & Safety courses. Kate Blye Kate Blye has achieved significant success with helping learners predominantly working within the construction industry. Kate worked as an Inspector for HSE for 9 years, and has an in depth understanding both of health and safety and of the construction process. She recognises that the practical skills required for construction work aren't always suited to a classroom situation and is passionate about making her training accessible to everyone. Ryan Lee Ryan Lee provides excellent support across many training areas but concentrates on the construction sector when delivering the Level 1 - Health & Safety in a Construction Environment course for OST. Other activities include tutoring for traineeships and apprenticeships. Ryan is passionate about delivering courses and upholding regulatory compliance.
