In this class you will learn:

-How to grow your own sourdough starter;

-Flours and their properties. I will explain how to combine flours to make light and crusty loaves;

-How to make classic gluten-free sourdough boule;

-Kneading, folding and shaping;

-Room temperatures and cold fermentation;

-Baking temperatures and adjustments;

-How to troubleshoot problems with you sourdough starter and the dough;

We will finish the class with a Q&A session and I will answer all your gluten-free sourdough related questions, but my support does not stop here! After the class, I will create a private Instagram group, where everyone can share their baking adventures and ask me questions. The group chat will be open for a few months giving you that extra support until you’re confident with the baking process.

* Please note that making sourdough bread takes more than 2h. During the class, I will be explaining and demonstrating each stage of the process (skipping the fermentation waiting time), so that you can make bread yourself after the class.

  • I know how to make gluten sourdough, but I haven't tried baking gluten-free version. Is this class suitable for me?

    Yes, totally! Although some stages of gluten-free sourdough baking are similar, most of it is different. You are working with completely different flours, hydration levels and extra binders to achieve that light and soft crumb structure.

    I am confident that you will benefit from this class, even if you baked gluten sourdough for more than a year now. 

  • Do you use gums to make your gluten-free sourdough bread?

    I don't use gums to make gluten-free sourdough bread. The only binder that I use is psyllium husk powder.
