WHAT WE DO The Sourdough School is a research institute for the study of the nutrition and digestibility of bread. The school is run by Vanessa Kimbell – baker, best-selling author, a regular contributor to the BBC4 Food Programme, researcher and teacher. It is at the Sourdough School that we research, develop and create sourdough bread – but it is more than just bread, and it’s more than just a school. Over the last few years, the gut microbiome and its role in supporting digestion and our mental and physical health has been one of our main areas of research. HOW WE TEACH YOU TO MAKE SOURDOUGH The Sourdough Club is where we teach you how to make our amazing bread. It is the part of The Sourdough School where we share our recipes, tutorials, tips, lessons and support you so that you can learn how to make Sourdough where ever you are. WHY ARE WE DIFFERENT? Here at the school Vanessa and the team have taken the most up to date scientific findings and applied them to sourdough and other fermented foods, working towards our mission to scientifically prove that sourdough and gut-friendly nutritious food can have a positive impact on our physical and mental health. THE SCHOOL: The Sourdough School is more than a cookery school. It’s about sharing incredible scientific knowledge about the connection of bread and our gut microbiome. It’s supported by a network of medical professionals, scientists, wheat breeders, nutritionists, specialist bakers, researchers, academics and we’ve been pooling the research on sourdough & fermentation from all over the world into a central point. We develop recipes, techniques and formula’s as our aim is not just to study, but conduct our own research on formula’s & grains and fermentation and to share what we find. It’s about applying evidence and the practical application of fermenting and baking into delicious, affordable nutritious bread recipes to bake, to eat and to enjoy. The Sourdough School has featured in the 3 BEST courses in the UK in the Sunday Times and in The Telegraph top ten baking courses in the UK, as well being included in the London Evening Standard top course in the UK. Each year the Sourdough School has: Research and development workshops working on different themed areas from bread and guts, sourdough for non-coeliac gluten sensitivity, IBS, blood sugar management, sports and mental health. An annual week-long diploma focusing on in-depth analysis on bread and guts. Research study groups with renowned neuroscientists, wheat breeders, microbiologists, scientists and medical professionals. Her own research development kitchen applying the scientific findings about bread and fermented foods to create new bread formulas and recipes. A clinical study as part of her PhD working with De Montford University and baking innovation group Puratos. The school also has an online offering called the Sourdough Club where people can learn how to make sourdough online via in-depth video masterclasses hosted by Vanessa. Until easter this year our we held RCGP accredited for our nutrition and digestion of bread diploma. We decided not to renew our subscription to allow for longer courses that included more baking.

Established in 2015, Arran Street East is a craft and design studio based in the markets area of Dublin city centre, where we make pottery and woven homewares to our own functional designs. We have a studio shop and we teach craft skills in Dublin and in Schull in West Cork. We use traditional crafting techniques to make and teach our craft, throwing on pottery wheels (pottery workshops), and weaving on looms and frame looms (weaving workshops). Each piece is individually made by hand using locally inspired colours and materials, and while our pottery and textiles are designed and made to mix and match, no two items are exactly the same. In the summer of 2022 we opened a Creative Hub in Schull, West Cork, where we teach workshops, including pottery, weaving and baking. Some Awards and Publications We are very honoured to have been recognised with some lovely awards. In January 2015 we presented our first collection at the Showcase trade show in Dublin where we won Best Tableware award at the show. We have shown our pottery at London Design Festival, Paris Fashion Week, Maison et Objet, and NYNOW, and have been featured in Elle Decoration, Vogue Living, Wallpaper, Monocle, The New York Times, Forbes, Country Living, House and Garden, The Gloss, Image Interiors, The Irish Times, and many more. In 2016 and 2017, Arran Street East won the Best Tableware category in the Image Interiors Design Awards. In 2019 we were the Home Category and Overall Winner of the Irish Made Awards by Irish Country Magazine. In 2022 The Gloss and The Shopkeepers included us in the list of 100 Best Shops in Ireland. The Art of Living Well at Home. Meet the team behind Wellbeing in Your Home Gosia Federowicz Yoga, Creativity & Cooking, Co-Founder of Wellbeing in Your Home Gosia loves teaching yoga and meditation, which she’s been doing since 2012 and has over 700 hours of yoga teacher training including 500h Yoga Alliance certified Advanced training. She’s been teaching corporate yoga and meditation classes since 2014, both in offices in person as well as via digital platforms. Her passion is seeing her students transform through yoga and meditation, becoming calmer, more focused and productive. Her yoga path has taken her through many different styles over the years, which has strengthened her own practice and her teaching, as well as helped her become a more confident person and lead a healthier life overall. Gosia is a mum to 2 year old Sophia and when not practicing or teaching yoga, she looks after her vegetable and flower garden, loves writing, mixed media art, baking and cooking, as well as learning Spanish and travelling. Her motto is ‘to just step on the mat and take it one breath at a time’. Zach Fairbanks Mindfulness Meditation & Aikido, Co-Founder of Wellbeing in Your Home Zach is a qualified Mindfulness Meditation teacher completing his training with Mindfulness Now recognised with the British Psychological Society(BPS). A bulk of his knowledge and experience comes through Aikido which he currently holds 5th Dan so Hombu at the World Headquarters Aikikai. Zach has been practicing Aikido for over 35 years and has travelled to the Headquarters in Tokyo Japan several times for regular instruction. Zach says ‘Aikido is a training system for mind and body. It has martial, spiritual, mental and physical fitness benefits’. There are many principles to be learnt and discovered though constant practice that can be applied in many situations of work and life – Connection over Attachment, Harmony, Centring and Shoshin – beginners mind. Essentially, Aikido is an embodiment of Mindfulness Meditation’ Zach openly suffers with anxiety and it can very often take its toll, especially when attempting too much multi tasking or chasing perfection. In order to help with this, Zach started yoga to compliment Aikido. Then, through yoga, he learnt to meditate something that is very much part of Aikido. “When I finally understood the point of meditation and practiced it daily, I became more grounded and centered”.
