Hi and welcome. I handcraft simple wooden spoons, bowls and pots for everyday use using age-old traditional tools and techniques. I sell my wooden ware at artisan crafts markets and I teach to small groups or on a one to one basis. I also work on a commission basis so there's always plenty to do. My interest in working with wood started in 1998 when I studied violin making at London Guildhall University for three years. I later went on to work with an antique furniture restorer near High Wycombe. While I learned a lot from both these experiences, it was not until I discovered the joy and creative freedom of working with green wood that a little voice in my head quietly said, ‘this is it!’. The bowls I sell are turned on a treadle lathe/pole lathe; an archaic machine, simple to make and maintain, using human energy to keep the work piece revolving. In the middle of winter the best way to keep warm is to turn a few bowls. I cut all of the wood for my bowls and spoons with either a chainsaw, bow saws or large one man cross cut saws. The tools I use for bowl turning are hand forged. I enjoy forging almost as much as I enjoy working with wood. Sometimes I carve bowls using the same tools I use for carving spoons; axes and knives, with the addition of a small adze for hollowing. These are very different in form to the turned bowls and usually I will only make these for sale on request. I do all my work in an old Devon barn, on beautiful Dartmoor where I live. I love to cook good, simple, healthy meals and enjoy foraging for wild foods. I’m always well entertained; watching the wildlife in the woods is so much better than watching the TV. In the evenings I enjoy playing my battered acoustic guitar or the fiddle; the former less badly than the latter.

My journey started many years ago when I suffered with severe IBS, inflamed acne, fatigue and very poor immune function. I was sick all the time, not knowing what was causing my issues. It left me with anxiety and I realised something needed to change. After a lot of personal research and the support from an amazing nutritional therapist, I found something that worked for me. I discovered I was deficient in so many nutrients and needed to eliminate, and introduce certain foods to help me heal naturally. This is when I realised the power and the healing benefits of eating well. Food really is medicine! Once I started to heal I really wanted to share my knowledge with others. If I could feel better, then I wanted other people to feel better too. So, I left my career in design to work in the natural health industry to learn more. This is when I started to run workshops to teach people how to make healthy and nutritious food. My main mission was, and still is, to help others and to give them the tools they need to improve their health. Today, after studying to become a Nutrition Coach, I can now help others on a greater scale. I absolutely love what I do. I know I had to go through my own struggle to be where I am today and I am grateful for the journey. I am still on this journey and I am always learning and listening to my body now. I love food and I love cooking with different types of foods. I have been introduced to whole new flavours and tastes. I have fun in the kitchen and like to throw things together. I am quite impatient, so cooking is usually less than 30 mins if possible. I also have a love for chocolate, so I am always coming up with new ways to satisfy my cravings. God says of believers, “For we are God’s workmanship, created in Christ Jesus to do good works, which God prepared in advance for us to do.” Ephesians 2:10. He prepared good works for me in advance. Much like Jeremiah, you and I have been entrusted with a task! This is why we exist. My heart is to see Eternity Bible College train young people for their mission. Too many people waste precious years of their lives chasing after the temporary and unfulfilling. The college years are vital. Proper training can save us from years of boredom. Our mission goes beyond education to discipleship. Our desire is that students will not only learn from teachers, but know them. Caroline Waldegrave is the founding Principal, former Managing Director and co-owner of Leiths School of Food and Wine, one of the most prestigious and respected cookery schools in the country. After 33 years’ involvement, Caroline retired and became a non-executive director on the board of Leith’s in 2009. She was also Chairman of the Guild of Food Writers for several years, and a former member of the Health Education Authority. Caroline was awarded an OBE in 2000 for services to the UK catering industry. Her passion and enthusiasm for teaching and love of food have continued to be the fundamental drivers of Caroline’s work. Since stepping back from day-to-day involvement in Leith’s School, Caroline has focused on imparting her wealth of cookery knowledge at Dudwell School, on the site of the beautiful Waldegrave family home, Dudwell Field Farm. In addition, she owns the Barley Mow pub in London's Marylebone with three of her four children, as well as being a director of the family organic dairy farm. Caroline is also in demand for media appearances, and has been seen on various TV and radio programmes, including Chef School, Masterchef and Tricks of the Trade. In what spare time she does have, Caroline enjoys playing bridge and tennis, and attending the theatre. Publishing Caroline is the author or co-author of a range of cookery books. These include the Leith’s Cookery Bible, Cookery Course and Cookery School books (co-written with Prue Leith), Leith’s Easy Dinner Parties (co-written with Puff Fairclough and Janey Orr), Leith’s Fish Bible (co-written with CJ Jackson), The Healthy Gourmet, and the Low Fat Gourmet.
