WHAT WE DO The Sourdough School is a research institute for the study of the nutrition and digestibility of bread. The school is run by Vanessa Kimbell – baker, best-selling author, a regular contributor to the BBC4 Food Programme, researcher and teacher. It is at the Sourdough School that we research, develop and create sourdough bread – but it is more than just bread, and it’s more than just a school. Over the last few years, the gut microbiome and its role in supporting digestion and our mental and physical health has been one of our main areas of research. HOW WE TEACH YOU TO MAKE SOURDOUGH The Sourdough Club is where we teach you how to make our amazing bread. It is the part of The Sourdough School where we share our recipes, tutorials, tips, lessons and support you so that you can learn how to make Sourdough where ever you are. WHY ARE WE DIFFERENT? Here at the school Vanessa and the team have taken the most up to date scientific findings and applied them to sourdough and other fermented foods, working towards our mission to scientifically prove that sourdough and gut-friendly nutritious food can have a positive impact on our physical and mental health. THE SCHOOL: The Sourdough School is more than a cookery school. It’s about sharing incredible scientific knowledge about the connection of bread and our gut microbiome. It’s supported by a network of medical professionals, scientists, wheat breeders, nutritionists, specialist bakers, researchers, academics and we’ve been pooling the research on sourdough & fermentation from all over the world into a central point. We develop recipes, techniques and formula’s as our aim is not just to study, but conduct our own research on formula’s & grains and fermentation and to share what we find. It’s about applying evidence and the practical application of fermenting and baking into delicious, affordable nutritious bread recipes to bake, to eat and to enjoy. The Sourdough School has featured in the 3 BEST courses in the UK in the Sunday Times and in The Telegraph top ten baking courses in the UK, as well being included in the London Evening Standard top course in the UK. Each year the Sourdough School has: Research and development workshops working on different themed areas from bread and guts, sourdough for non-coeliac gluten sensitivity, IBS, blood sugar management, sports and mental health. An annual week-long diploma focusing on in-depth analysis on bread and guts. Research study groups with renowned neuroscientists, wheat breeders, microbiologists, scientists and medical professionals. Her own research development kitchen applying the scientific findings about bread and fermented foods to create new bread formulas and recipes. A clinical study as part of her PhD working with De Montford University and baking innovation group Puratos. The school also has an online offering called the Sourdough Club where people can learn how to make sourdough online via in-depth video masterclasses hosted by Vanessa. Until easter this year our we held RCGP accredited for our nutrition and digestion of bread diploma. We decided not to renew our subscription to allow for longer courses that included more baking.

Chris Pond (Chair) is also Chair of the Lending Standards Board and the Equity Release Council Standards Board and is an independent director with Current Account Switch Service (part of Pay.UK) and of Cape Claims Services, an asbestos compensation scheme. Chris is also a trustee of the Money and Mental Health Policy institute (for which he chairs the Mental Health and Income Commission) and is a member of the Treasury FinTech Development Panel. Chris has in the past been CEO of two national charities (Low Pay Unit and Gingerbread) and chair or trustee of many others, most recently The Money Charity and GambleAware. He was Member of Parliament for Gravesham between 1997 and 2005, serving as Work and Pensions Minister and as a ministerial aide in the Treasury. Sian Williams VICE CHAIR SIAN WILLIAMS Sian Williams is Head of National Services at Toynbee Hall in London’s East End. Sian has been responsible for Toynbee Hall’s local and national financial inclusion programmes since October 2009, including Transact (the UK’s national forum for financial inclusion), financial inclusion training, research, evaluation and strategic consultancy. Sian takes a whole systems approach to financial well-being, supporting organisations to develop policies and practice which make it easier for people to make the most of their money. She has co-led the Financially Inclusive Tower Hamlets programme, which adopts this environmental approach within one of the UK’s most deprived communities. Sian’s team have also created a ground-breaking needs and impact digital measurement tool for financial health, the MAP Tool, to fill the gaps around knowing “what works” in financial health interventions. Sian provides advice on financial inclusion to financial services providers, and is a member of advisory groups for the Payments Council, the LINK Scheme, the BBA, DWP, HMT and the Big Lottery. Sian is also a member of the new PSR Panel, and a trustee for the Money Advice Trust.

Define Fine has been created by a small but committed team of parents and professionals who have lived experience of school attendance difficulties. As DEFINE FINE: Parent Peer Support for School Attendance Difficulties we support our members who are struggling with school attendance difficulties and parent carers from our wider SEND and mental health networks. We provide peer support using our tried and tested resources and to help parents advocate for the support their children and young people need to be able to learn and achieve. We hope to build up our growing network of peer supporters, who we can train to use our guides for their own family and ultimately to then help other families experiencing attendance difficulties. Our resources and training are also available for professionals in Education, Health and Social Care. Empowering parents to be able to effectively work with professionals, should encourage not only earlier intervention, with much better outcomes, but also reduce the risk and impact of unhelpful, and unnecessary attendance prosecutions and social services interventions. It is vital that children, young people and their families receive appropriate support, and especially in cases where professionals insist children are “fine in school, “ all are clear as to how fine is actually defined. For us “fine in school” would mean that children are safe, healthy, happy and their needs are acknowledged and supported to be able to access suitable education and learn.
