Caroline Waldegrave is the founding Principal, former Managing Director and co-owner of Leiths School of Food and Wine, one of the most prestigious and respected cookery schools in the country. After 33 years’ involvement, Caroline retired and became a non-executive director on the board of Leith’s in 2009. She was also Chairman of the Guild of Food Writers for several years, and a former member of the Health Education Authority. Caroline was awarded an OBE in 2000 for services to the UK catering industry. Her passion and enthusiasm for teaching and love of food have continued to be the fundamental drivers of Caroline’s work. Since stepping back from day-to-day involvement in Leith’s School, Caroline has focused on imparting her wealth of cookery knowledge at Dudwell School, on the site of the beautiful Waldegrave family home, Dudwell Field Farm. In addition, she owns the Barley Mow pub in London's Marylebone with three of her four children, as well as being a director of the family organic dairy farm. Caroline is also in demand for media appearances, and has been seen on various TV and radio programmes, including Chef School, Masterchef and Tricks of the Trade. In what spare time she does have, Caroline enjoys playing bridge and tennis, and attending the theatre. Publishing Caroline is the author or co-author of a range of cookery books. These include the Leith’s Cookery Bible, Cookery Course and Cookery School books (co-written with Prue Leith), Leith’s Easy Dinner Parties (co-written with Puff Fairclough and Janey Orr), Leith’s Fish Bible (co-written with CJ Jackson), The Healthy Gourmet, and the Low Fat Gourmet. Many of the recipes you will cook on the Dudwell courses will be taken from the Leith’s Bible, but you will also benefit from a copy of the Dudwell cookery book which you will take home at the end of the course, or which is available to buy separately here.

After leaving University I worked for a bakery company which is where my journey in Food Safety began: I went on a basic course where the trainer (an Environmental Health Officer) showed us an disturbing object which he had found in food, and told us various horror stories such as seeing rats in kitchens and about many other experience during his work. This is where the fascination began. Not a glamorous career for a young girl, looking down drains and climbing down to dirty cellars, but it provided plenty of tales to fascinate people at dinner parties! After a career change which resulted me spending 25 years as a government food inspector, I decided to hang up my badge and defect to the other side. Literally Game keeper tuned poacher or should I say head chef turned food critic? I wanted to help businesses obtain a good rating and allow them to not feel terrified when the inspector calls at their premises So I set up The Food Safety Company in 2015 and have successfully helped many businesses to obtain – and maintain – high food hygiene ratings. I have also enjoyed conducting accredited and bespoke training courses for clients, and creating bespoke food safety management systems for many businesses. To date I have a 100% success rate with clients wishing to obtain a 5 rating (if they follow my advice!). This include all types of business; from small cafes to large, prestigious wedding venues I would like to share this success with you. On a personal note, I consider myself to be a foodie: I like talking about food; cooking it; eating it and more importantly sharing it with friends and family. People often ask if I think about anything other than food. My answer is “very rarely”! I also like to visit food festivals and restaurants, trying to keep ahead of the current food trends and products, and I support Alice Charity Food Bank.

Having discovered her passion for all things horses at a very young age, she took her 'hobby' to the professional level by becoming an apprentice jockey at one of Europe's oldest and most prestigious racecourses, Berlin-Hoppegarten, in Germany. There she graduated from Jockey School with distinction and qualified as a Specialist for Horse Keeping, Breeding & Professional Rider in 1991. To broaden her skill set further, Bea went on to work for 18 months at Berlin's Equine Veterinary University as a Veterinary Nurse, gaining invaluable experience and insights in equine health and welfare which have stood her in good stead all throughout her career. Bea continues to develop and broaden her own knowledge and skillset through regularly attending CPD training days. She previously trained with Kelly Marks (Intelligent Horsemanship) and is a committed student of Marijke de Jong's Straightness Training Home Study programme, employing these skills and techniques in her day-to-day work. Strong Like a Mutha was Founded in 2016 by Lyndsey Roberts after the birth of her son. Having previously been a professional dancer and exercised her whole life, Lyndsey found herself in a whole new world with a high risk pregnancy and very little evidence based information on safe and effective training for women in her situation. Ultimately this resulted in the complete halting of exercise which then caused lots of pain and discomfort throughout her pregnancy. Returning to exercise postnatally Lyndsey knew there had to be more information out there and began to feel drawn to helping and supporting women in the fitness industry. And so Strong Like a Mutha was born! Lyndsey and the SLAM community have created a gym environment (The Mutha Ship) that is welcoming, inviting, non-intimidating and allows its members to work as hard as they like.
