I have always been interested in communication and languages, so I gained my initial degree in teaching Hungarian language and literature both to native speakers and as a foreign language. I have taught in different countries – in Hungary, Serbia and Switzerland – committed to continuous learning and development. I grew up with my mums much younger sister who was diagnosed with autism, so I always had a loving heart for children and people living with special needs… Whilst studying neuro diversity I discovered that I was a child with all symptoms of ADHD… and at some point I had to realise that it never went away… I still do have it… I have started reading and taking notes about it, and now i can claim with confidence that I know this type of condition inside out… I have worked in nurseries as an Early Years Teacher and later as a nursery Manager. After studying at the Metropolitan University and gaining the Diploma in Teaching Adult Learners I have taught Early Years Childcare to Practitioners as a Tutor/Assessor in wide variety of settings in London. Apart from creating a relaxed and joyful environment where active learning can take place, I am passionate to help and motivate people in every possible way, so I have also studied a variety of Holistic Coaching and Healing methods as well as Event Management. After leaving University I worked for a bakery company which is where my journey in Food Safety began: I went on a basic course where the trainer (an Environmental Health Officer) showed us an disturbing object which he had found in food, and told us various horror stories such as seeing rats in kitchens and about many other experience during his work. This is where the fascination began. Not a glamorous career for a young girl, looking down drains and climbing down to dirty cellars, but it provided plenty of tales to fascinate people at dinner parties! After a career change which resulted me spending 25 years as a government food inspector, I decided to hang up my badge and defect to the other side. I wanted to help businesses obtain a good rating and allow them to not feel terrified when the inspector calls at their premises So I set up The Food Safety Company in 2015 and have successfully helped many businesses to obtain – and maintain – high food hygiene ratings. I have also enjoyed conducting accredited and bespoke training courses for clients, and creating bespoke food safety management systems for many businesses. To date I have a 100% success rate with clients wishing to obtain a 5 rating (if they follow my advice!). This include all types of business; from small cafes to large, prestigious wedding venues I would like to share this success with you. On a personal note, I consider myself to be a foodie: I like talking about food; cooking it; eating it and more importantly sharing it with friends and family. People often ask if I think about anything other than food. My answer is “very rarely”! My name is Denise Thompson/Coutu. I’ve been teaching art classes and giving parties for over 10 years. I love working with kids. I’m a mom, and have also had my own daycare. I also come from a family of teachers. I get great satisfaction from seeing my students grow, both in their skill level and their understanding of the arts. I grew up in Hudson, NH and studied mainly in Boston. My educational experience includes a Bachelors of Fine Arts from Tufts University; a Fine Arts Diploma from the Museum School in Boston (5 yrs), and Certificates in Graphic Design and Web Design from schools in Manchester, NH. I have been a graphic design professional for over 18 years. I worked in the art department in MA working with digital files and preparing them for press. I have also worked in the theatre industry in Boston, which was fun and exciting. My other professional skills include scenic painting, oil painting and drawing, sign making, jewelry making, clay work, mosaic making, sewing and cake decorating. I would love to teach anyone who is interested in learning the skills to make beautiful works of art. Preparing pasta or gnocchi for our Sunday lunch was a family get together event! We all helped and learned how to make things in a traditional way. During the major festivities such as Christmas and Easter the food preparation took weeks and families and friends exchanged their creations: Struffoli, Panettone and Pandoro at Christmas; Pastiera, Tortano or Casatiello at Easter; for Carnival we made Chiacchiere, and for father’s days Zeppole. There were times when we all went to zia’s house to cook pizza and bread in her stone oven… every occasion was special and gave us an excuse to prepare a traditional dish. Therefore, my love for the food and food preparation grew thanks to the area I was born and my family’s customs. When later I travelled as a student, I exchanged recipes with other people and grandmas from Sicily, Puglia and Tuscany. Therefore, the Italian cooking workshop is an opportunity for me to share with you, in my kitchen, what I have learned, and recreate together an authentic Italian experience.
