To say I am a fan of Pilates is somewhat of an understatement – It has changed my life quite fundamentally. I discovered Pilates in 2012 and the impact has been profound. I am both physically and mentally stronger, I have more energy, I have more stamina, and yes, I look better. Let me explain each one of those rather dramatic statements. The basic principles of Pilates are breathing, concentration, control, centering, precision and flow. I am stronger physically due to the nature of the exercises – they’re intense. Pilates was originally developed in the early 1900s by Joseph Pilates from a combination of yoga, martial arts, boxing, and weightlifting. It’s not a high impact cardio routine, but controlled, precise movements that challenge the body to promote strength, flexibility, and balance – and it just works. The body becomes stronger, firmer and better aligned to cope with daily life more easily. I feel energised because I have learned how to breathe properly and I have improved my posture significantly – I have asthma – quite a scary condition I find – and understanding the effect of posture has been a massive help and taking control of my breathing has empowered me – I feel in control and less scared as such I am stronger mentally. I find daily activities don’t leave me drained as I have much more energy. I’m 43 and my world revolves around my family; a very active husband, he’s the current Masters National Champion and used to swim for his country; our brilliant daughter Emma, she’s 6 so every day brings something new; our busy busy dog Oscar, a working cocker who nobody told is nearly 11; and this year we added a couple of loppy bunnies to the team. We are more active than the pre-Pilates me would have been able to be – I’m so grateful I discovered it – the lifestyle it affords me is wonderful. I didn’t start Pilates to lose weight (there are faster routes if that’s your ambition) but lose it I have – not a particularly massive amount – I was never a candidate for Britain’s Biggest Loser but it looks like I have lost more than the scales suggest – just because engaging the core muscles brings about an improved posture that looks better. The lower abdominals and hips are where it’s most significant – and the strength that comes with that is clear. Pilates exercises are applicable – and adaptable – to suit pretty much anybody, whether you’re an active individual or not. I’m Xuan (pronounced Sawn). I was born in Vietnam from Chinese Vietnamese parents and I am proud to be one of the original Vietnamese boat people now living here in the UK. In the late 1970s, the aftermath of the Vietnam war and the growing oppression of the ethnic Chinese living in Vietnam forced my family to flee their home. We left Vietnam on a small overcrowded and ramshackle boat that wasn’t fit for the open water and sailed the perilous South China Sea to Hong Kong. At age 2 my first and only memory of Hong Kong is a hazy image of the orange skies. After 6 months we left the tropical heat of Hong Kong and immigrated to the cold, or you could say dreich (Scots for dreary) climate of the Scottish winter. We lived in the quiet outskirts of Glasgow for four years before moving and settling in London, which was a hubbub of culture and activity. By the age of 14 I had lived in four vastly different countries and each of these places have influenced the person that I am and the food I love to cook and eat. My own cooking adventure started at an early age – washing the rice grains for steamed rice and undertaking the long and meticulous task of cleaning and snapping the tails off bean sprouts for my parents spring rolls. This you can say was my training for the future food lover in me – or feeder. As a child of refugees, love was often shown through food rather than words. From these duties and by always keeping my belly full, my parents quietly passed on their own rich food heritage and family history to me through the years. In my 20’s I became a sushi chef at a vibrant restaurant in Central London, and spent 4 years learning the meticulous art of preparing, filleting and slicing fish for sushi, maki, nigiris and sashimi. I have since run a number of supper clubs in London and Dundee, including a charity Chinese hotpot that raised over £2,000 for the charity – Sarcoma UK. This year, I’ve taken the next leap in my food adventure and launched my online cookalong classes, which have been great fun and allow me to reach new like minded food enthusiasts far and wide. Casual Rice is all about sharing my love for food and my own culinary heritage through authentic but informal Vietnamese and Chinese meals I devoured when growing up, with Japanese influences from my sushi training days. The name Casual Rice comes from The Mandarin Way, a book by the inspirational Cecilia Sun Yun Chiang. A pioneering woman who in the 1960’s opened one of the first authentic Chinese restaurant in North America. In her book she writes “when we sat down to meals as a family, we adopted a much simpler mode of eating … such meals were known as “pien- fan”, “casual rice” or what might be termed home cooking”. As the saying goes, food is a universal language that brings people together. I’m a foodie through and through! I like to eat! I like to cook! Variety is the spice of life, and we shouldn’t get stuck in a rut when we cook. Cooking is a creative process and should be one of life’s great pleasures. I am a big fan of the local Ayrshire seasonal produce, and recently demonstrated dishes at the Ballantrae Festival of Food and Drink 2020 and Newmilns Food Festival, 2017. I am lucky to live in a beautiful part of the world. Maybole is sandwiched between Culzean Castle and Country Park and Alloway where Robert Burns was born. The area is steeped in history and an abundance of local artisan produce. Farm shops sell Ayrshire meat, cheese, vegetables and all manner of other products. Of course, the coast is close by too with a fantastic array of seafood. With all of this on my doorstep, its not hard to be inspired. I believe it is important that we can all cook at least a few great dishes from scratch. Unfortunately, so many people don’t have the skills or confidence in the kitchen. Many people are short of time, and for some, cooking skills simply haven’t been passed down to them. There is an increasing awareness of the health benefits of eating nutritious home cooked meals. Furthermore, I think its very important that people eat together, in order to socialise and share time. BACKGROUND Prior to Home Cook School, I worked as a Lecturer within the Creative Industries Department at a local Further Education College. My role involved working with various student groups – both advanced and non-advanced, community groups and school classes. I love teaching people and seeing them develop knowledge, skills and confidence! Since I was very young, I have been a keen cook. I have travelled extensively, and learned from many different international cuisine styles. My husband and I love to eat out and plan our holidays around breakfast, lunch and dinner! I have attended many cook school classes including Tuscan and Croatian styles. For years, many friends and family would ask me to share my recipes and cooking tips – this combined with my years of teaching experience, consequently gave me the idea to launch Home Cook School. For a long time, I was keen to become self-employed however, due to work and family commitments, I was never able to fully devote myself to the concept. In 2014 I gave up my Lecturing job (after 12 years) to focus on bringing up my young family. The following year I moved to Maybole, South Ayrshire and finally had a kitchen big enough to run classes from! In 2016, I decided to launch Home Cook School. I feel passionate about sharing my love and knowledge of home cooking with anyone who is keen to realise their ambition to become a better home cook! Una has always loved reading international and translated fiction and welcomes submissions from authors writing contemporary fiction that engages with cultures and traditions from around the world, such as in voices of the deities in Freshwater by Akwaeke Emezi or the subversive tales of Sayaka Murata. She is not looking for children’s or YA titles, science fiction or high-concept fantasy, but is open to submissions from authors writing in the speculative fiction space, and books with fantastical or otherworldly elements, be that magical realism or supernatural horror, such as Mona Awad's campus novel with a twist, Bunny. Una would also love to read more writing that engages with the natural world and reminds us of the limitations of human understanding. In non-fiction, Una enjoys books that furthers her understanding of wider societal issues — nature and the environment, culture, and little-known history. Her recent non-fiction favourites are Eve by Cat Bohannon, Doppelgänger by Naomi Klein and Unearthed by Claire Ratinon.
