In May, the first Lu Ban Workshop in Europe was opened at Chichester College (CC). Officials from the Tianjin Education Commission, Senior management from PAM, TES, and CC were participated in the opening ceremony. 2018 In April, the first and only UK fully regulated Level 3 Diploma in Chinese Culinary was approved by PAM Education’s awarding Body - Qualifi and appeared on the Regulated Qualification Framework. In October, PAM Education offered 10 scholarships to prototype the L3 Diploma course with Chichester College Group. Most learners reported to have benefited from the course professionally. 2019 In Early January, PAM-TES collaboration continued to flourish. Witnessed by the senior management team of the Tianjin Food Group, PAM Education and TES signed a MoU to develop a restaurant and international training centre at the iconic building of Cains Brewery in the heart of Liverpool’s vibrant Baltic Triangle. On 31st January, PAM sponsored Chinese Culinary Arts students were given the opportunity of a lifetime when they cooked for Number 10 Downing Street and the Rt Hon Theresa May at the 2019 Chinese New Year Reception. With 150 people attending the event, the students excelled in cooking a variety of canapés alongside four prestigious Chinese master chefs, flown in to help prepare for the event. In February, built on the success, PAM created IACCA, aspired to be the global leader of high quality and authentic Chinese Culinary Arts education and development. In July, the Level 2 Certificate in Chinese Culinary Art was approved In October, the Level 4 Diploma in Chinese Culinary Management was approved In November, Lu Ban Restaurant and Training Centre Liverpool was launched, which have not only brought premium Chinese cuisine and dining experience to Liverpool but also provide the state of art learning venue and work placement opportunities to Chinese culinary lovers. BBC North West and the BBC the One Show have reported on the ground-breaking Chinese cuisine experience that the Lu Ban academy and the IACCA training centre offers. 2020 In January, IACCA was named finalists in the Education Link Awards at the Department for International Trade, North West England Greater China Awards Ceremony. Miss Scarlett is the owner and manager of Droxford Montessori, establishing the school in 2014. Miss Scarlett has over 15 years of experience in Early Years Education and her passion for Montessori began in 2005 after a work experience placement Certified with a full Montessori International Teaching Diploma and Early Years Teacher Status, Miss Scarlett is the school's special educational needs coordinator and leads all staff practice in safeguarding. Miss Scarlett is currently on maternity leave. Miss Helen Miss Helen is our Montessori School Manager and having lived in France for some years loves to share her love of France with the children. “I have worked in childcare and education for over 20 years qualifying in NVQ level 2 and 3, Montessori international diploma and a range of training including Senco. I have had varied roles including working in schools managing a baby room and caring for children with autism, physical disabilities and palliative care. I started working at Montessori in 2006 and fell in love with the ethos as well as my Montessori family. Every day is a learning experience not only for our children but me too.” Miss Lucie Miss Lucie is our Deputy Manager and vholds her Early Years Teacher Status achieved at Portsmouth University. She has previously run Ofsted rated ‘Outstanding’ early years setting’s and has worked at Droxford since 2015. Miss Lucie is a mummy of two little ones, both of whom have attended Droxford Montessori. Having previously trained in Food Hygiene Miss Lucie carries out our weekly cookery lessons using products from our allotment when possible as well as introducing a mindful approach to healthy happy eating. Miss Lucie is fabulous at being creative and loves gardening and spending time on the allotment with the children.. Miss Zoe Miss Zoe is an excellent dancer and loves throwing some moves with the children. “My daughter joined Miss Scarlett’s school in 2015 and totally embraced the Montessori ethos thoroughly enjoying her time in the setting. I thought the principle involved, in particular the child led activities, learning through play and nature were very beneficial. I have now taken this forward into my current NVQ training.” Miss Lorraine Miss Lorraine is our Resources Manager and has worked as a Montessori teacher for over 15 years. “I did my training alongside Miss Helen and we have worked together ever since. I too fell in love with the ethos and have enjoyed many years working alongside and learning from the most amazing and talented children. I was part of the team originally that helped set up and open Droxford school with Miss Scarlett and it has been lovely to watch it grow into the outstanding setting it has become. I decided to step back from full time teaching two years ago and now work in the role of resources management (basically making the classroom look beautiful and a fun learning environment). Outside of school I am Married with one son, I am a qualified French Cuisine Chef and my hobbies include: fitness and mud runs. I have a cockapoo called Zeus and 5 tortoises.” Miss Clio She is a mummy to one little boy called Bertie and a fluffy dog called Humphrey. Miss Clio is always smiling, she also holds her NVQ Level 3 and is currently working towards her Montessori Diploma. Miss Clio has excellent arty skills and the children love working with her. Miss Sophie Originally came to work at our Holiday Clubs. Falling in love with the ethos she decided to join us during term time whilst deferring university for a couple of years. Miss Sophie brings much enthusiasm to the classroom and is very much loved by all the children.

ICIF, a prestigious Italian cooking and enology school, has its headquarters in the Castle of Costigliole d'Asti, a town located among the most beautiful hills of Monferrato, at the gates of the Langhe, in a land with a strong agricultural vocation, famous for the production of Barbera and Moscato wines. The town is dominated by the imposing forms of the Castle, one of the grandest and best preserved in the province of Asti, of medieval origin, it was restructured over the centuries, and passed from hand to hand of various owners until it arrived in 1854, married by Francesco Verasis, Virginia Oldoini, Countess of Castiglione, whose legend is still part of the Castle walls today. In fact, it is said that, considering her resourcefulness and her charm, in 1855 her cousin Cavour sent her on a mission to the French court of Napoleon III to plead the Franco-Piedmontese alliance with the emperor. The countess' great social and seductive presence gave the expected results: she was luxuriously hosted in Compiègne, very worldly, very expensive, the countess was for a year the almost official lover of the emperor. On the west side of the Castle, owned by the municipality, there is a large portal which can be accessed via a double flight of stairs: this is the entrance to our Institute, the Professional School of Italian Cuisine where, from 1997 to today, among those same walls, young cooks from all over the world take turns learning the secrets of Italian food and wine. The classrooms and laboratories for training activities in the Castle: Tasting room and Enoteca Inside the School, in the historic cellars of the Castle, the Enoteca has been set up, where the best Italian producers exhibit their products. The ICIF National Enoteca is among the most advanced structures in Italy for deepening the knowledge of Italian wines. Inside the Enoteca there is a very modern tasting room with a futuristic design, which we have equipped with 20 multifunctional tasting stations which can be used not only for wines, but also for the sensory analysis of other products, such as oil, vinegars, coffee, etc. Elaiotheque Inside the Scuola, in the historic cellars of the Castle, the Elaiotheque has been set up, where a selection of Italian extra virgin olive oils is displayed. The ICIF National Elaioteca brings together experts and enthusiasts of the mythical product, it is the first and for now the only initiative in the olive sector that offers an objective review of certified quality Italian extra virgin olive oils whose profile and whose gastronomic applications have been ascertained by an international panel of tasters recognized by the International Olive Council. We have selected exclusively products of Italian origin guaranteed by IGP, DOP, organic farming and product quality certifications. The ICIF National Elaioteca represents an important and unique tool for the valorisation of the best Italian extra virgin olive oils and for their in-depth knowledge aimed at the best culinary applications. Restaurant It is a refined and exclusive environment, adjacent to the main kitchen, it is used for training relating to room service, for events, official lunches and for the final essays of some training courses in which the students prepare a complete menu for guests and authorities at demonstration of their learning. Chocolate laboratory A new didactic space, set up with all the equipment to learn the art of combining and treating the different varieties of cocoa and ingredients to create the delicious flavor of a quality chocolate, guided by the Master Chocolatiers to discover their secrets. Grotto of cheeses An exhibition space from other times recreated as the "crutin" of our elders, to enhance the great variety and quality of Italian cheeses and not forget the importance of the history and tradition of a millenary culture now exported and appreciated all over the world. I’m a foodie through and through! I like to eat! I like to cook! Variety is the spice of life, and we shouldn’t get stuck in a rut when we cook. Cooking is a creative process and should be one of life’s great pleasures. I am a big fan of the local Ayrshire seasonal produce, and recently demonstrated dishes at the Ballantrae Festival of Food and Drink 2020 and Newmilns Food Festival, 2017. I am lucky to live in a beautiful part of the world. Maybole is sandwiched between Culzean Castle and Country Park and Alloway where Robert Burns was born. The area is steeped in history and an abundance of local artisan produce. Farm shops sell Ayrshire meat, cheese, vegetables and all manner of other products. Of course, the coast is close by too with a fantastic array of seafood. With all of this on my doorstep, its not hard to be inspired. I believe it is important that we can all cook at least a few great dishes from scratch. Unfortunately, so many people don’t have the skills or confidence in the kitchen. Many people are short of time, and for some, cooking skills simply haven’t been passed down to them. There is an increasing awareness of the health benefits of eating nutritious home cooked meals. Furthermore, I think its very important that people eat together, in order to socialise and share time. BACKGROUND Prior to Home Cook School, I worked as a Lecturer within the Creative Industries Department at a local Further Education College. My role involved working with various student groups – both advanced and non-advanced, community groups and school classes. I love teaching people and seeing them develop knowledge, skills and confidence! Since I was very young, I have been a keen cook. I have travelled extensively, and learned from many different international cuisine styles. My husband and I love to eat out and plan our holidays around breakfast, lunch and dinner! I have attended many cook school classes including Tuscan and Croatian styles. I am a strong advocate of reducing food waste by shopping thriftily, planning and using leftovers and often integrate these principles into my lessons. For years, many friends and family would ask me to share my recipes and cooking tips – this combined with my years of teaching experience, consequently gave me the idea to launch Home Cook School. For a long time, I was keen to become self-employed however, due to work and family commitments, I was never able to fully devote myself to the concept. In 2014 I gave up my Lecturing job (after 12 years) to focus on bringing up my young family. The following year I moved to Maybole, South Ayrshire and finally had a kitchen big enough to run classes from! In 2016, I decided to launch Home Cook School. I feel passionate about sharing my love and knowledge of home cooking with anyone who is keen to realise their ambition to become a better home cook! A SUSTAINABLE APPROACH TO COOKING LOCAL PRODUCE As an active member of the Ayrshire Food Network, we pride ourselves in using locally sourced, fresh produce. Not only that – we run cooking courses promoting both Scottish and Ayrshire produce, connecting our clients with local suppliers, supporting the local economy and teaching our clients where they can buy local! We are certified to deliver Zero Waste Scotland Love Food Hate Waste Cascade Training. We recycle our waste and when clients require disposable plates and cutlery for buffets, we use biodegradable products. We also car share where possible! GROW YOUR OWN We encourage our clients to try growing their own fruit, vegetables and herbs in our classes. We use home grown produce in many of our classes and catering. BIOSPHERE CERTIFICATION MARK We proud to hold the business Certification Mark for the Galloway and Southern Ayrshire UNESCO Biosphere, which is the stunning area of natural beauty that Home Cook School is situated within. Cooking tutor, and business owner Lindsay Guidi is also a Board Member of the Biosphere. South West Scotland is a place of abundant good quality food, drink and crafts which reflect the diversity and unique character of the countryside and region. One of the best-known crops in the Biosphere is Ayrshire ‘tatties’, known for their earthy, sweet flavour.
