FERMENTATION IS FUN!! 

Both sauerkraut and kimchi are made using a technique referred to as lacto-fermentation. In this process lactic acid bacteria (LAB), are the microrganisms responsible for changing raw vegetables into a complex mixture of lactic acid and chemical compounds resulting in new and funky flavours! During our workshop you'll learn the skills and techniques necessary to create a successful lacto-ferment at home every time! 

Our 2.5 hour course starts with a welcome drink of our house-made kombucha along with a few tasters of our core range of sauerkraut and kimchi, (with an occasional one or two kitchen experiments we've been working on).

From here we dive into what fermentation actually is and the scientific methodology of how we as humans can harness it to do our bidding. This involves touching on some basic scientific principles to assist in the understanding of what we are actually doing when we 'ferment' something. These principles will be ESSENTIAL when making a successful ferment on the day and at home. Throughout the workshop we touch on some of the nutritional facts surrounding fermented foods and why the term 'probiotics' is thrown around so often. 

As nutritionists, we'll share our knowledge about nutrition, gut-health and how fermented foods can play a role in improving our health and strengthening our immune systems. Each participant will have the opportunity to make their own unique sauerkraut using a selection of herbs, spices, fruit and veg. Additionally, you'll learn how to make an authentic style kimchi. Each participant takes home two kilner-style jars of their prepared sauerkraut and kimchi along with at-home care instructions to ensure you have all the tools necessary for your ferments to turn out fantastic! 

Fermentation is also a delicious and nutritious way to use up spare fruit and veg. You'll learn how you can make the most out of precious food, by providing another tool in the fight against food waste!

Nothing! Well maybe some clothes - knives and nakedness tend not to mix... Seriously though, we'll provide you with everything you need (including some tasty samples to try). A bag to take your ferments home in might be an idea though.

We'll be holding the workshop out of our very own fermentation kitchen located on Bentley Green Farm in Crick, just outside of Chepstow and a easy-peesy drive from Bristol and Cardiff. There's also a bus which stops right at the entrance to Bentley Green Farm on the A48.

The entry requirement for this course are the basic functional skills (Numeracy, Literacy, ICT). FACE TO FACE OR LIVE ZOOM CLASS:
We have 3 days Live Zoom or Face to Face classroom session from 10am to 5pm around the country. This course will be taught and trained by an experienced teachers, who will use a wide range of teaching activities; including lectures, group work, discussion, demonstrations, candidates presentations and many more activities that help learning. Micro Teaching session will be held on last day of the course where trainee teachers prepare and deliver a short teaching and learning session to their peers. After 3 days session you are required to complete the coursework/assignment and send them for marking, it takes 7-8 day to get the result and certificate.
COURSE ASSESSMENT:
There is no formal examination is required, but at the end of the course you need to submit a portfolio assignment.

CAVA is a combined of assessment of occupational competence in the work environment, and the assessment of vocational skills, knowledge and understanding. If you’re looking for the next step in your career, internal quality assurance is a great progression for an assessor looking to earn more. You will be protecting learners by ensuring that assessors are running assessments correctly, within your chosen discipline. This course is also ideal for employers who would like members of staff to become the go-to for quality assurance, assessment procedures and general legal and best practice requirements.

UNITS COVERED: There are two awards and a certificate available at Level 4:
Unit 1: Award in Understanding the Internal Quality Assurance of Assessment Processes and Practice is a knowledge-only award for those starting their journey as internal quality assurance practitioners or those who need to know about internal quality assurance but are not carrying out quality assurance themselves.
Unit 2: Award in the Internal Quality Assurance of Assessment Processes and Practice is for practitioners who conduct internal quality assurance of the assessment process from within a centre/organisation, by sample planning, monitoring and advising on the practice of assessors.
ENTRY REQUIREMENT:
The candidate for this qualification must have good literacy and numeracy skills. We strongly recommend you have completed the Level 3 Award in Assessing Vocationally Related Achievement (Assessors Award). You also need to demonstrate level of competency in order to enroll for this course. You must be able to demonstrate competency through work place assessment. Candidates also must have at least 2 candidates to assess as part of the training.
COURSE ASSESSMENT:
No closed book exam is required or there is no formal examination is required, however at the end of the course you need to submit a portfolio assignment with other necessary documents.
