My journey started many years ago when I suffered with severe IBS, inflamed acne, fatigue and very poor immune function. I was sick all the time, not knowing what was causing my issues. It left me with anxiety and I realised something needed to change. After a lot of personal research and the support from an amazing nutritional therapist, I found something that worked for me. I discovered I was deficient in so many nutrients and needed to eliminate, and introduce certain foods to help me heal naturally. This is when I realised the power and the healing benefits of eating well. Food really is medicine! Once I started to heal I really wanted to share my knowledge with others. If I could feel better, then I wanted other people to feel better too. So, I left my career in design to work in the natural health industry to learn more. This is when I started to run workshops to teach people how to make healthy and nutritious food. My main mission was, and still is, to help others and to give them the tools they need to improve their health. Today, after studying to become a Nutrition Coach, I can now help others on a greater scale. I absolutely love what I do. I know I had to go through my own struggle to be where I am today and I am grateful for the journey. I am still on this journey and I am always learning and listening to my body now. I love food and I love cooking with different types of foods. I have been introduced to whole new flavours and tastes. I have fun in the kitchen and like to throw things together. I am quite impatient, so cooking is usually less than 30 mins if possible. I also have a love for chocolate, so I am always coming up with new ways to satisfy my cravings. Oxford BSAC Scuba Diving Club is the award-winning Oxford Branch of the British Sub-Aqua Club (BSAC). The branch was founded in 1956 – a few years after the BSAC itself, making it one of the oldest diving clubs formed in the UK. As you might imagine we have a rich history and some very experienced members. Our club is run entirely by volunteers. We train people to dive and snorkel but we also welcome qualified divers to join us (whoever they trained with). We organise regular diving trips to Dorset and inland sites. We run several trips a year to longer-range destinations – in the recent past, these have included the Red Sea, Gozo (Malta), Scapa Flow, Sound of Mull, Plymouth and the Isles of Scilly. We also have close relationships with other local BSAC branches including the Oxford University Underwater Exploration Group (OUUEG) with whom we often collaborate. The activities of the branch centre around three areas, the clubhouse, pool training and diving. We also carry a decent level of equipment and have a great hard boat moored in Weymouth – all of which help to make us a successful dive club which has been going for over 60 years. We are a mature club with a friendly and enthusiastic atmosphere. The branch has around 70 members from the Oxford area stretching from Bicester in the North to Didcot in the South and from Witney in the West to Aylesbury in the East. We even have some members who live here during the week and go home on weekends. We cover a good cross-section of Oxford society. Ages range from young children who snorkel to senior citizens that dive or who are social members. We are always happy to welcome new members, be they untrained novices, experienced divers or instructors – no matter who they have trained with. Throughout the years we have been developing a collaborative network of interests and opportunities for the Romanian community living in the UK, contributing to England's multicultural milieu. We facilitate cultural exchanges between Britain and Romania, constantly aiming to improve our relationship. RCC also provides an up to date Guide containing information about Romanian institutions, organisations, businesses and services in the UK. Our Work We rely on the enthusiasm of our team of volunteers, who get involved in our programmes and help us improve invariably. Moreover, the Centre benefits from a number of voluntary British advisers on dealings with British institutions and audiences. These are friends of Romania, private or public persons from various institutions who have supported the Centre in its endeavours by encouraging us to bring new ideas to life. Besides the cultural activities implied by the name, RCC also plays an active part in the social life of the Romanian Diaspora in Britain. Our History The idea of establishing an organisation to represent Romanians in the UK dates from the '50s, when ACARDA (Asociatia Culturala a Romanilor din Anglia - The Cultural Association of the Romanians in England) was founded by Ion Ratiu and Horia Georgescu working together with various individuals, notably the ladies of the Romanian community. In 1984 the UMRL (Uniunea Mondiala a Romanilor Liberi - The World Union of Free Romanians) was launched in Geneva to unite Romanians from all over the world. Ion Ratiu was elected the first President. From that date (1984) UMRL published a monthly newspaper in Romanian and English, 'Romanul Liber' (Free Romanian), which flourished until 1997. In 1984 a British branch of UMRL was founded, along with branches in 23 other countries. Sandu Pobereznic was elected as the first British President, and succeeded by Nicolae Ratiu in 1992. The newspaper was closed and political activity sharply scaled down after the election of 1996, when it was considered that the objective of UMRL, the restoration of freedom and democracy to Romania, had largely been achieved.

I have been teaching Italian for over ten years privately and for colleges. I have taught Italian at the Brasshouse language centre in Birmingham, at North Warwickshire & Hinckley College and South Staffordshire College as well as delivering training for companies such as EXD Ltd. in Coventry, Arlani in Burton, Redrock in Birmingham and for private groups, reaching areas in the West Midlands, from Birmingham to Coventry, Warwick to Lichfield and Solihull. ITALIAN LANGUAGE CULTURE AND COOKING WORKSHOPS- ABOUT ME I grew up in a small village in a traditional Neapolitan family where we prepared local and classical Italian dishes, growing and preserving most of the food we ate. Preparing pasta or gnocchi for our Sunday lunch was a family get together event! We all helped and learned how to make things in a traditional way. During the major festivities such as Christmas and Easter the food preparation took weeks and families and friends exchanged their creations: Struffoli, Panettone and Pandoro at Christmas; Pastiera, Tortano or Casatiello at Easter; for Carnival we made Chiacchiere, and for father’s days Zeppole. There were times when we all went to zia’s house to cook pizza and bread in her stone oven… every occasion was special and gave us an excuse to prepare a traditional dish. Therefore, my love for the food and food preparation grew thanks to the area I was born and my family’s customs. When later I travelled as a student, I exchanged recipes with other people and grandmas from Sicily, Puglia and Tuscany. Therefore, the Italian cooking workshop is an opportunity for me to share with you, in my kitchen, what I have learned, and recreate together an authentic Italian experience.
