I am an artisan flower farmer and city and guilds trained florist based in near York. I am a huge advocate for sustainable British flowers and love to use my own flowers where possible. Having a PhD in plant pathology I am interested in sustainable growing methods and I don’t use pesticides or fungicides on my flower farm. I grow my flowers on the family farm which is 8 miles from the centre of York and create floral arrangements for events and special occasions with an emphasis on scent, colour and seasonality that are inspired by nature and the changing seasons. I love running workshops and teaching about my sustainable methods and the science behind the growing.

Luke Stoltman is the eldest of the Stoltman brothers (and the brains and the beauty!). Born in Invergordon in the Scottish Highlands in 1984, Luke has had a passion for fitness and strength training from a young age. Inspired by a family photo of his grandfather, a Polish war refugee, carrying a log the same size as his body, Luke began weight training from the age of 15. Initially training as a bodybuilder, he later became more interested in strength, entering and winning his first contest, a local deadlift competition in 2011 aged 27. This led to him participating in the ‘Highlands Strongest Man’ in 2012, held in a gym car park in Inverness, where he again placed first.

I generally describe it as a sort of starter for different foods, similar to a sourdough starter or a kombucha SCOBY. The underlying biological processes are very different. Koji is a type of edible mold called aspergillus oryzae. There are other members of the aspergillus family that are also used in similar ways all over Asia. Koji is specifically Japanese and has been used there for well over 1500 years. Molds have been used in fermentation to provide complexity and depth in all sorts foods, from brie to salami. At the heart of it, like any fermentation, the microbes and enzymes break down some of the molecules in the starting ingredients into their constituent parts.
